If you grew up during my time you will be able to totally relate to these two things: orange creamsicle popsicles from the ice cream truck and cottage cheese as your mother’s favorite diet food. There was something about an orange pop surrounding vanilla ice cream that was so refreshing and good. Not to mention super sweet and delicious on a hot summer’s day. The cottage cheese? Not so much. The texture is kind of funny, not quite yogurt, not quite cheese. But I discovered something about this little-used ingredient. It’s totally mild but adds a delicious creaminess. I love replacing this high protein ingredient in all my smoothies where yogurt is an ingredient.

Ingredients
1 1/2 cups unsweetened almond milk
1 cup low-fat cottage cheese
1/4 cup oats
1 large navel orange, peeled and chopped
1 ripe banana
1 teaspoon vanilla
2 pitted dates
1/2 teaspoon cinnamon
a couple of ice cubes (optional)
Instructions
1. In a high-powered blender add the almond milk and the rest of the ingredients. Blend on high with ice (if using) until well combined.
