Minty Pea Dip

Minty Pea Dip is your new favorite green sauce!

So simple to make but so big on flavor and nutrients. Yogurt is a wonder food for your digestion, adding in millions of beneficial bacteria. Peas add heart healthy fiber and mint’s anti-inflammatory benefits cannot be beat.

Added up, this dip is hit nutritionally and with so much flavor.  I served this with my Middle Eastern Chickpea Cakes but you can also use this dip as a dip, or even a salad dressing.

Minty Pea Dip

Makes about 2 cups

Ingredients

1 cup frozen green peas, thawed out
1/2 cup plain whole milk yogurt
1/2 cup fresh mint leaves
1/4 teaspoon coarse salt
1/2 teaspoon lemon zest
1 teaspoon lemon juice

Directions

1. In a mini food prep or food processor blend together the peas, yogurt, mint, lemon zest, juice and salt. Combine until smooth. Will keep in the refrigerator for five days.
