Minty Pea Dip
Makes about 2 cups
Ingredients
1 cup frozen green peas, thawed out
1/2 cup plain whole milk yogurt
1/2 cup fresh mint leaves
1/4 teaspoon coarse salt
1/2 teaspoon lemon zest
1 teaspoon lemon juice
Directions
1. In a mini food prep or food processor blend together the peas, yogurt, mint, lemon zest, juice and salt. Combine until smooth. Will keep in the refrigerator for five days.
