Description

There are two things to love about using a dry rub when grilling: convenience and health.  Rub it on chicken, other meats, or tofu right before cooking.  The spices, high in antioxidants, make a very flavorful zero-calorie addition.

Ingredients

Units Scale

1/4 cup paprika
2 tablespoons chili powder
2 tablespoons cumin
2 tablespoons coarse salt
1 tablespoon black pepper
1 tablespoon white pepper

Instructions

Mix all of the ingredients together in a small bowl.  Rub on and underneath the skin of chicken, fish, or tofu and grill.

Notes

To store: make a double batch of this rub and store it in a glass container in a cool, dark cabinet.
