Salmon Brown Rice Bowl with Tahini Dressing

Description

This is a simple bowl for when you feel like you need to reset your eating. And it’s delicious too!


Ingredients

Units Scale

2 cups cooked brown rice
1 pound salmon, grilled or roasted
4 bunches of greens such as kale, collards, and/or dandelion, chopped and rinsed
2 tablespoons extra virgin olive oil
2 large cloves garlic, minced
salt and pepper

Lemony Tahini Miso Dressing
1/3 cup tahini
2 tablespoons white miso
1/2 lemon, juiced
1 garlic clove, minced
1/3 cup warm water


Instructions

  1. Make the greens: in a large sauté pan heat the olive oil over medium-high heat.  Add the garlic and sauté for 30 seconds, being careful not to let it burn.  Add the damp greens with a sprinkle of salt and pepper and continue to sauté until the greens are wilted and softened, about 5 minutes.
  2. Make the dressing: In a blender or mini food processor, add the tahini, miso, lemon juice, garlic and water.  Blend until smooth.
  3. Divide the ingredients among four bowls,  Add the sautéed greens.  Top with 1/2 cup of brown rice each and the salmon.  Drizzle with the dressing and enjoy.

Notes

Feel free to mix it up – use tofu instead of salmon, quinoa instead of brown rice, and broccoli instead of kale.
