Description
This Warm Tabouli with Lemon Mint Dressing recipe is a classic Mediterranean whole grain side dish that is a perfect complement to grilled fish or roasted chicken. For a vegan option, add some chickpeas and toasted, chopped walnuts.
Ingredients
3 cups water
1 teaspoon coarse salt, divided
1 1/2 cups bulgur
2 tablespoons extra virgin olive oil
2 teaspoons fresh lemon zest
1/4 cup fresh lemon juice
1/2 teaspoon ground black pepper
1/4 small handful mint leaves, chopped
1 small handful of parsley, chopped
3 scallions, sliced
1 pint cherry tomatoes, sliced in half
1 small cucumber, peeled, seeded and diced
Instructions
1. In a small saucepan, boil the water with the 1/2 teaspoon of the salt. Add the bulgur, turn off the heat and cover the pan. Let sit for 15 minutes to allow the bulgur to absorb the water.
2. In a small mixing bowl whisk together the olive oil, lemon juice, lemon zest and 1/2 teaspoon each of salt and pepper. Add the mint and set aside.
3. In another mixing bowl combine the cooked bulgur, parsley, scallions, tomatoes and cucumber. Pour the dressing over the bulgur and gently toss together. Serve warm.
Notes
Bulgur is a whole grain that is a staple in Mediterranean cooking. It is from the wheat family so it does contain gluten.
